Basil & Mozzarella Omelette
You won't see the eggs on the same way after trying this light and rich omelette.
Hi everybody, today we are cooking a delectable Basil & Mozzarella omelette, and you just need 10 minutes for this recipe.
1/2 125g ball of mozzarella
1/2 a bunch of fresh Basil (15g)
350g ripe mixed-colour tomatoes
1/2 or 1 teaspoon of chilli flakes
4 large or 5 medium eggs
This recipe serves 2 people, but if you are more, do not worry, double or triple the amounts and everything will be fine!
First, slice the tomatoes, and place them on a bowl, then dress with a pinch of salt, black pepper, and 1 or 2 teaspoon of red wine vinegar and olive oil, reserve it. Second, pick the basil leaves into a mortar and pound with a pinch of salt into a paste. Then blend it in 1 tablespoon of olive oil to make a basil oil. Finaly, dice the mozarella.
Place a non-stick frying pan on a medium heat with 1/2 tablespoon of Olive oil. Beat and pour in the eggs and move them gently around the pan. When they are lightly scrambled but still loose, set the mozzarella in the centre, then drizzle over the basil oil.
Let the eggs set for 1 minute (or until completely done), fold the top over half back over. If you feel confident, flip it back and then flip it back again.
For dish up, arrange the tomatoes over a sharing platter and place the omelette in the middle. Sprinkle the chilli flakes (as much as you want) and the remaining Basil oil.

If you do not have one of the ingredients on the list or you do not like it, don't hesitate to use another type of oil or maybe fresh chilli instead of chilli flakes.
