Beef Tongue Burritos

I know there are many people (my wife) who have a wrong idea of beef tongue. Here I bring you these spectacular burritos that will change the way you see this exquisite piece of meat.


Hello everyone, today I bring you some beef tongue burritos that will melt in your mouth.


Ingredients


Whole beef tongue

2 tsp black pepper

2 tsp garlic powder

1.5 tsp ground cumin

1 tsp smoked paprika powder

5 tsp salt

2 leaves of Laurel

1 shot glass of apple cider vinegar


Guacamole

2 ripe avocados

1 tomato

1/2 onion

1/2 lemon

1 bunch of coriander


Refried beans

Beans from the day before or canned

Fuet (optional)


Preparation


Start by preparing the marinade to cook the meat. Mix the salt, pepper, garlic, cumin, paprika, and bay leaf with a shot of apple cider vinegar. Reserve


In a pressure cooker put the tongue, the marinade and 1 liter of water or until the tongue is completely covered. Cook for approximately 45 minutes to 1 hour from when it starts to sound. If you do not have a pressure cooker, you can make it without problem in a normal pot, although this way it will take approximately 2 to 3 hours to prepare the tongue.


Once the tongue has reached 92ºC of internal temperature, remove the leather or skin of the tongue and discard. slice the rest of the meat and pare it as small as possible.


To accompany this recipe we will prepare refried beans, so start by peeling and cutting the fuet into very small pieces (if you don't have fuet you can use any chorizo) Blend the beans until they form a puree. In a frying pan over medium heat, sauté the fuet a little and add the blended beans. Mix very well and reserve.


And of course, the guacamole could not be missing and for this we used our new Ninja food processor and it was very simple, we divided into 4 and added the tomato, onion and cilantro to the processor cup. We chop it a little and then add the avocado, the juice of half a lemon, salt, pepper and chop again until we achieve the desired consistency.


Now we have everything ready ... so to enhance the flavor of the tongue we will use a piece of pork fat on a hot grill or pan. Add the meat and brown it little by little.


Meanwhile, heat the tortillas on both sides. Don't let them brown too much, as they may crisp and break.


Only the assembly remains, on the hot tortilla place a good amount of scattered refried beans, a little meat, mozzarella cheese on top and a good amount of guacamole. I recommend you NOT to fill them too much since it is more difficult to close them and you run the risk of them breaking. Finish by browning them a little when they are already assembled and voila, enjoy!
