In my house we are all super lovers of KFC chicken and my wife's favorite burgers are fried chicken. So today we bring you this spectacular recipe that will leave you drooling.
Hello everyone, today we will prepare an exquisite super crispy chicken burgers with Japanese mayonnaise and KFC-style chicken
Ingredients
4 boneless chicken thighs to use in hamburgers
8 chicken thighs (or your favorite piece)
1 liter of buttermilk
2 cups all-purpose wheat flour
2 cups of cornstarch
2 tbsp dried oregano
1 tbsp thyme
2 tablespoons mustard powder
2 tbsp garlic powder
2 tbsp dried parsley
2 tbsp sweet paprika
2 tbsp black pepper
1 tbsp cumin
1 tbsp ground coriander
1 and 1/2 tsp salt (to taste)
Japanese Mayonnaise
2 egg yolks
20g Dijon mustard
1 pinch of salt
250ml sunflower oil
10g white sugar
6g rice vinegar
10g of green lemon juice
Burgers
2 tomatoes
5 lettuce leaves
2 avocados
4 pieces of Bread Brioch
Preparation
We will start by salting our chicken pieces very well from the night before and leave them in the fridge overnight.
With the help of a hand mixer, we will start making the mayonnaise so place the egg yolks, salt and Dijon mustard in a bowl and start beating at low speed to integrate everything. Now very carefully begin to incorporate the oil very little by little, in the form of a thread and always beating, increase the mixing speed and make sure that the oil you are adding is quickly incorporated into the rest of the mixture. This may take a while, but the texture you are going to achieve is incredible. Once all the oil has been incorporated, add the rice vinegar, lemon juice, and sugar to the mayonnaise while continuing to beat. Slice the sides of the bowl and mix again so that everything is well integrated. Try and reserve for later.
Now in another much larger bowl, add all the buttermilk and cover all the chicken pieces with it. Leave it in the refrigerator for at least 3 hours.
Prepare the seasoning, add all the spices to a mortar and mash them all until the desired texture is achieved, mix with the flour and cornstarch in a large bowl where the chicken will overflow.
To accompany this delicious hamburger we will also prepare a delicious guacamole, add avocado in the mortar, add salt and oil to taste and reserve.
After 3 hours, remove the chicken pieces from the buttermilk without removing all the mixture and pass through the flour with spices that you had previously prepared. Make sure they are well covered on all sides.
Heat plenty of oil and fry both the whole chicken pieces and the boneless thighs. These will be the ones we use to assemble our hamburgers.
Now it's time to put them together, open the loaves and spread the base with plenty of Japanese mayonnaise, place lettuce and tomato, the meat, Monterey cheese and a good spoonful of guacamole on the top bread. Ready .. and you can enjoy !! The meat will be super crispy and juicy.
