Lamb Yogurt on Bagel Sandwiches

It is strange to think of seasoning a piece of meat with yogurt, but let me tell you friends that the idea is great and it is unimaginable.


Hello everyone, today we are preparing an amazing lamb shoulder with yogurt on the grill.


Ingredients


1 whole lamb shoulder

1 tablespoon of cumin

1 tablespoon of sweet paprika

1 tablespoon garlic powder

1 tablespoon dried parsley

1 tablespoon of dill

1 tablespoon of black pepper

350 ml Greek yogurt

Dijon mustard


Homemade Mayonnaise with Parsley

1 teaspoon Dijon mustard

1 bunch of fresh parsley

250 ml of sunflower oil

2 egg yolks

the juice of 1/2 lemon


Preparation


Start by grinding the pepper, dill, and parsley with 2 tablespoons of sea salt until you achieve a fine, homogeneous texture. Next, mix all the spices with the yogurt and mustard and then smear the entire shoulder in the mixture. Place on a rack without removing the yogurt and insert the wireless thermometer.


Turn on your grill and place the lamb over indirect heat for approximately 2 hours or until it reaches 70ºC internally.


Meanwhile, and to accompany this lamb beauty, you can make a homemade mayonnaise, so in a bowl add the yolks, a teaspoon of Dijon mustard and with an electric mixer at medium speed, begin to mix everything. Now little by little add the oil and integrate it into the mixture before continuing to add more. Once incorporated, add the juice of half a lemon, salt and pepper to taste and the finely chopped fresh parsley.


To add freshness to this dish, we will make a salad with super thin laminated cherry tomatoes, julienned onion, sliced ​​cucumbers and a few pinches of Sumac and salt to taste.


Once the lamb reaches 70ºC, wrap it in abundant aluminum foil, but don't forget to add a little liquid (in our case we use cider) to keep the piece hydrated. Leave it on the grill again until it now reaches 90ºC.


Once this temperature is reached, let it rest for at least 40 minutes and then sliced ​​thinly. We made some delicious sandwiches with bagels, mayonnaise, our friend the lamb and the delicious salad.
