Mexican Cup, Ecuador

Although the name of this recipe is the Mexican Cup, it really is an Ecuadorian invention that enlivens our parties and that we bring you to enjoy this Halloween with family and friends! It is scary !!


Hello everyone, today we bring a plate to share, you can serve it in a large dish or make individual molds for everyone to enjoy on Halloween.


Ingredients


800 gr of minced meat

2 cans of beans *

2 tablespoons refried beans *

1 onion

1 clove garlic

1/2 teaspoon of cumin

1 teaspoon oregano


Avocado and Cheese Sauce

3 ripe avocados

200 gr fresh cheese

1 large can of heavy cream

1 cup of mayonnaise


Tostitos or fresh corn tortillas for frying

This recipe is designed to make a medium mold, so if you want to make more or less, don't worry, multiply or divide the quantities and everything will be fine.

Preparation


Start by cutting the onion and garlic very small and sauté them in a skillet over medium high heat with a drizzle of oil, until the onion is a little transparent. Add oregano, cumin and then add the minced meat. Cook the meat until it is almost all brown in color and now add the previously washed and drained beans.


If you have stew or beans prepared by yourself, USE THEM, your recipe will be incredible !! If you use canned beans, add two tablespoons of refried beans, this will help the meat sauce to thicken and all the ingredients come together. Salt and pepper to taste and reserve for serving.


To prepare the cheese sauce, with the help of a food processor, blend the cheese with a splash of heavy cream. Add the cream little by little. We don't want the sauce to be too runny. Add two to three tablespoons of mayonnaise and season with enough salt and pepper.


For the avocado sauce, place the avocados in the food processor or blender, add a splash of heavy cream, season with salt and pepper, blend until they form a thick sauce, add two tablespoons of mayonnaise, and the juice of half a lemon . Reserve it.


For serving time, in a medium mold place a layer of meat and flatten it as much as possible, then place a thin layer of avocado sauce and then a thin layer of cheese sauce. Repeat the procedure until all the sauces are finished. Finish with cheese sauce and garnish with bbq sauce.


Use Corn Tostitos to eat this spooky delicacy. We use fresh corn tortillas (you can find them in Mexican food stores in your city), we cut them into triangles and fry them in hot oil until golden and crisp.
