These two short recipes are important preparations for paella, however they can be used in the elaboration of many other recipes, such as salads, meats, rice and more.
Ingredients
4 to 6 garlic cloves (depending on the size of the garlic)
1 bunch of parsley
olive oil
1 empty jar
Preparation
This sauce is very easy to make, it just consists of mincing everything very small and mixing it with the olive oil and a little salt. We use the mortar to make it, but you can cut it all by hand with a knife, or you can use a food processor or blender.
Once all the ingredients are mixed, store the sauce in a clean and sanitized jar so you can put it in the fridge and it will last for at least a week.
You can use this delicious sauce to dress salads, season meats, or to add extra flavor to paella.

4 to 5 tablespoons of olive oil
Preparation
This caramelized onion is undoubtedly one of the simplest preparations in the world, but it provides an exquisite flavor to your meals and undoubtedly raise the level of your cuisine.
All you have to do is chop the onion into small cubes, and then in a frying pan over low heat, put 4 to 5 tablespoons of olive oil, then add the onion and cook for 40 minutes to an hour. Always on low heat.
Over time, the onion will begin to reduce its size, change from white to brown, and most importantly, it will acquire that characteristic sweet flavor that goes well with hamburgers and sandwiches.
