This spectacular pizza contains everything I like about Mexican food in one place ... plus the homemade dough is unmatched and gives it a unique flavor.
Hello everyone, today we will prepare a wonderful roast beef pizza with homemade dough that will leave you speechless.
1 Rump steak
500g of bread flour
10g of salt
1 tablespoon of olive oil
500 ml of warm water
1 teaspoon of sugar
Tomato sauce for pasta
Grating mozzarella cheese
Pico de gallo:
1 handful of coriander
2 tablespoons mayonnaise
1 tablespoon sour cream
Start the day before preparing the meat with the DRY BRINE technique, so add salt on all sides and let it rest in the fridge overnight.
To prepare the dough, activate the yeast in the warm water with a little sugar and let it rest for 10 minutes until it foams. Add the salt to one side of the flour and the yeast mixture to the other. Add the oil and mix with a spoon to finish kneading for five minutes.
Let the dough rest in a bowl with a little oil for an hour in a warm place. After this time, knead to remove the air and divide it into 2 portions. Cover them with cling film and put them in the fridge overnight.
For the pico de gallo, start by chopping the onion, tomato and coriander very small, mix everything very well and add a little salt but DO NOT add lemon.
In a food processor add the avocado, mayonnaise, sour cream, salt and the juice of half a lemon, blend well until a homogeneous sauce is left.
Now the expected moment, if you have a wireless thermometer, place it in the middle of the steak and take your meat to the fire or as in our case to the grill. If you are going to make grilled pizza, I recommend that you get pizza stone and put it to heat up ahead of time. The stone is not necessary, but it makes the dough super crunchy and reduces the risk of burning with direct heat. Take the meat out of the fire in the term you want, keeping in mind that it will receive a little heat when we are making the pizza and cut it into thin strips.
Now that you have all the pizza toppings ready, take one of your doughs out of the fridge and open it on a surface dusted with flour. Add some jarred tomato sauce or you can make it yourself (check out our pizza recipe). Spread grated mozzarella cheese over the entire surface of the pizza and bake or grill for approximately 10 minutes or until the crust is crisp on the underside and the edges are golden brown.
When the pizza is 2 minutes away from being done, add the strips of meat to heat up. Remove from the heat and add the pico de gallo, pieces of sour cream and all the avocado mayonnaise you want ... This SPECTACULAR !!!
