Hello everyone, today we will prepare a delicious smoked bacon in our new smoker
Ingredients:
Whole bacon
honey
dried parsley
brine
salt and pepper
For the sandwiches:
Your favorite bread
Purple Onion
lemon
Preparation
Start by making a few cuts to the skin of the bacon and then smear a little honey on all sides. Top with salt, pepper, and dried parsley. Place the wireless thermometer and reserve.
Now turn on your smoke and remember to place some pieces of wood (we use apple wood to give more depth of flavor) I recommend that you use wood from fruit trees, but avoid using eucalyptus or pine since their wood is very aromatic and could leave a bitter taste in your piece of meat.
Remember to add hot water to maintain a humid environment while the piece is being smoked. We will try to maintain the temperature at 120ºC until we reach 70º internally, so we will replenish charcoal, firewood and water when they run out.
Do not forget to hydrate the piece of meat with brine. This will keep the meat super juicy.
While I was preparing this meat, we thought about making some delicious sandwiches, so cut the onions into thin julienne strips, put them in a bowl with very hot water for 4 minutes, drain it and add the juice of 1 lemon and salt to taste.
Once the internal 70º has been reached, wrap the meat in aluminum or butcher paper and take it to the fire again until it reaches 90ºC. For this part of the process, you no longer need to replace more wood or water, since the piece is covered and we are only looking for it to achieve the right temperature.
When you reach the desired temperature, let it rest for 10 minutes, remove the bones, remove the skin, and assemble your sandwiches with the tanned onion and mustard. Its wonderful!!
