El seco is a dish that suits almost all tastes ... it can be made with different meats and liquids. The only thing that all Seco must have is a good sofrito and the special ingredient Peruvian Aji or Aji for seco.
Hello everyone, today we will prepare an exquisite chicken Seco in the purest Ecuadorian style. We are going to use a pressure cooker to speed up the cooking process, but you can do it in a normal pot.
Pressure cooker: 15 minutes from when the pot starts to whistle.
Normal pot: 30 to 40 minutes, or when the chicken is fully cooked and soft.
Ingredients
1 green pepper
1 onion (purple or white)
2 garlic cloves
2 teaspoons of Peruvian Aji or Aji for seco
1/4 tsp cumin
1 tsp oregano
1/4 tsp ground black pepper
1 tsp of anato paste
1 bunch of coriander
8 pieces of chicken (we use thighs)
2 glasses of apple cider
This recipe is intended for 4 people. So if you want to make more or less quantity, multiply or divide the ingredients and everything will be fine!
Preparation
Start preparing a good sofrito and for this you need to cut the green pepper, onion and garlic very small. In this case we'll be using a food processor but you can do it with a knife or in a blender.
Add spices to the vegetable preparation, remember that Peruvian aji is the special ingredient of this dish and if you can't find it in stores in your country, don't hesitate to look it up on Amazon.
The next step is to salt the chicken and seal it in the pot where you are going to do all the preparation. So add a good splash of oil to the bottom of the pot and brown the chicken on both sides. Then remove it from the pot and add the sofrito. Stir fry for 2 to 3 minutes and put the chickens back in the pot. Then add 2 glasses of cidra and 2 glasses of water or until the chicken pieces are completely submerged. Put the lid on the pot and cook according to the pot you are using. (pressure cooker 15 minutes after it starts to whistle or 30 to 40 minutes in a normal pot or until the chicken is completely done)
Meanwhile, chop the coriander. After the cooking time, add the coriander to the preparation and that's it!
Serve and accompany with yellow rice, avocado and fried yellow plantain slices.
