Tropical Shrimp Burgers (Easter Week Special)

In the tireless search for the perfect burger (our family's favorite food), we have reached Easter and since custom says that meat should not be eaten, we are going to prepare some delicious shrimp burgers.

Hello everyone, this weekend we got creative with the recipe to commemorate Easter, so I hope you love these spectacular shrimp burgers as much as we do.


Ingredients


Meat

1 kilo of peeled, clean and raw shrimp

2 pinches of pepper

8g of salt

40 ml of rice wine

18g mustard

22g panko

1 egg

1/2 spring onion

20g of breadcrumbs


Dip Sauce

2 small eggs

300ml of oil

juice of 1/2 lemon

salt and pepper to taste

1 handful of coriander

1 handful of parsley

green bananas

oil

lettuce

tomato


Preparation


Start by cutting the spring onion into thin slices. Then in a food processor place the shrimp, pepper, salt, rice wine, mustard and process until the shrimp have been completely chopped. Then add 1 egg, panko, spring onion and breadcrumbs, mix with the help of a spoon or spatula and take it to the fridge for at least 1 hour, so that it compacts a bit.


For the sauce, place all the oil, 2 eggs, salt and pepper to taste in a deep jar and with the help of a hand blender, starting from the bottom and on the highest speed, begin to blend everything. Little by little it will emulsify until it forms the mayonnaise, then add the lemon juice, cilantro and parsley. Try its flavor and correct it. Reserve in the fridge.


To give this burger a special touch, we are going to make green plantain on straw. That means, very thin, fried and crispy strips that will provide an extra texture and flavour to this spectacular hamburger.


Cut the lettuce into julienne strips, the pineapple into small squares and mix everything. Cut a good ripe tomato into slices and reserve everything for the moment of assembly.


Prepare your iron, heat and take the opportunity to toast the bread a little. Add a little oil to the clean griddle, place a generous spoonful of the minced shrimp meat, flatten it very carefully with the help of a spatula, turn it over when it is browned on the bottom (approximately 2 minutes), cook again until it's golden brown on the other side and that's it. let's put it together


Bread, sauce, lettuce with pineapple, tomato, the spectacular shrimp meat, sauce, straw banana, more sauce and close all with the other bread... definitely great, a sweet sin for this Holy Week.
