I know that I am transgressing the original Genovese pesto recipe, but I am sure that if you do it my way, you will never make it different again.
Hello everyone, today we will prepare an exquisite salad with my pesto recipe.
1 large bunch of basil leaves (stems removed)
1/2 handful of mint leaves
1 small handful of parsley leaves
1/2 handful of coriander leaves
20 to 30 gr of pine nuts
1 or 2 cloves of garlic
1 piece of Parmesan cheese
Extra virgin olive oil
Bacon or bacon to taste
tomatoes of different sizes
fresh mozarella or buffalo mozzarella
We will start by blanching the basil. For this, immerse the basil in boiling water for 20 to 40 seconds or until you see that the green color intensifies. Remove from the water and drain the best you can.
Separately in a blender (it can also be done in the mortar but it takes much longer), add the coriander, parsley and mint, add the basil, pine nuts, garlic and Parmesan cheese. Add a little salt and olive oil to taste. Taste and correct the flavour by adding salt and oil. Reserve.
Cut the bacon into thin slices and grill until golden brown. Now it only remains to assemble the salad, cut the tomatoes into slices, halves or whatever you like, place them on the plate next to the buffalo mozzarella, add the bacon pieces and bathe everything with the delicious pesto.
