Ardito's Ranch Eggs

Whoever said that eggs are only for breakfast, is because they have never tried this recipe!



Hello everyone, today we will prepare some delicious ranch eggs; Although there are many recipes on the internet with the same name, let me tell you that none like this one. It is simply spectacular!


This recipe will be ready to eat in 10 minutes, so lets start.


Ingredients


2 small avocados

4 chorizos (if they are already seasoned, do not add additional salt to the rest of the recipe)

2 tomatoes

1 onion (white or red, it doesn't matter)

6 to 8 eggs

Canned beans

1 or 2 tablespoons of chopped coriander


Optional:

Fresh chili

Your favorite bread to accompany


This recipe is designed for 4 people, but if you want to cook for more or less people, don't worry, divide or multiply the amounts and everything will be fine..

Preparation


As in previous recipes, we will start preparing all the ingredients for the time of cooking.


First, diced the onion into small squares (although they don't have to be perfect).

Second, use a grater to grate the tomatoes.

Third, being very careful not to cut yourself, remove the skin or coating from the chorizos. Finally, chop the chilli you want to use in the recipe.


Now that we have all the ingredients ready, add to a frying pan over medium heat, a tablespoon of butter and 1 or 2 tablespoons of the oil of your choice (this prevents the butter from burning). Add the onion and stir constantly. Once it is soft and caramel-colored, add the grated tomato and cook for 2 or 3 minutes, until a kind of "sofrito" is formed.


Now add the chorizo's meat, mince it as much as you can (we started using a wooden spoon, but it is easier with scissors) and cook everything for 1 or 2 more minutes. Add the previously drained beans, mix everything very well and cook for 2 or 3 minutes, stirring occasionally (add a little of water to hydrate everything).


Crack the eggs over the previous preparation, add a little salt on the yolks of the eggs and cover the pan so that the eggs cook on top. Now, depending on how you like the eggs, you must remove them from the fire. If you like them with the hard yolk, let them cook for a long time, with the lid on; But if you like the soft yolk, cover them only for 1 minute since the heat of the rest of the dish will finish cooking them.


With the help of a spoon, place pieces of avocado throughout the pan. Finely chop coriander and spread it over all the food and do the same with the chili. Use as much as you like.


Cut some slices of the bread that you like the most, and put them to toast in a frying pan or toaster.


We put the pan on the table and served directly there. So enjoy it .. these are the best eggs ever!

If your plate does not look like our image, don't worry! We spent over 40 minutes trying to find the perfect angle for the photo.


If you don't have one of the ingredients on the list or don't like something, don't hesitate to replace it. If you have homemade beans, please use them !! They will be absolutely delicious ... also, if you are a vegetarian, you could not add the chorizo and in that case you could put some salt to season.


Obviously, if you do not like spicy, skip that step, we put chili, only halfway through the pan so that we could all enjoy this delicious food.


This recipe is just a guide, and you can adapt it to your tastes. So do not stop doing it, you will be amazed at how fast and delicious it is!
