Peachy Pork

If you are a fan of combining sweet and salty, this is the perfect recipe for you. The combination of sweet peaches with delicious pork flavor and natural fat is indescribable. A recipe that will awaken your senses without a doubt.



Hello everyone, today we will be cooking a fantastic pork with peaches. This recipe is super easy and will be ready to eat in less than 15 minutes.


Ingredients


2 x 250g pork chops or pork shoulder, with rind 1 onion 4 garlic cloves 2 sprigs of fresh rosemary 1 tin of peaches halves in juice 50ml Bourbon or whisky (1 shot)


This recipe is designed for 2 people, but if you want to cook for more, do not worry, double or triple the amounts and everything will be fine.

Preparation


We will start by cutting the garlic cloves into slices and then we will cut the onion into 4 and separate its layers. Then, we will cut the rind of the pork pieces and make small cuts along it. Season the pork pieces on both sides and the rind strips with salt and pepper.


In a preheated skillet over very high heat, with two tablespoons of oil, place the strips of pork rind, skin side up. Fry them until golden and crisp. Don't take your eyes off them. They could burn very quickly.


In another skillet, medium-high heat, with two tablespoons of oil, roast the pork for 3-5 minutes on each side. Once the pork pieces are well done, remove them from the pan and let them rest for 1 minute.


Meanwhile, add a little butter or lard in a hot skillet and add the garlic, onions, rosemary leaves, and peaches.


When everything is a bit golden, add the meat and crispy pork rind again, mix everything and add the Bourbon or Whisky. Stand back! and bring the edge of the skillet a little closer to the fire and it will start flaming the food. If this doesn't happen, use a match to light it. Be careful with your eyebrows!!


Once the flames begin to subside, serve and enjoy!!
